Ingredients
500g minced beef
1 clove of garlic
Salt and pepper
1 oxo cube
30g butter
4 burger buns
60g cheese
1 beef tomato
1 red onion
1 ice burger lettuce
125g butter (softened)
75g sugar
1 egg yolk
1 tsp vanilla
375g plain flour
1 lite ice cream
Here’s how
First things first to make the shortbread.
Cream together the sugar and butter until it becomes pale and the sugar is dissolved in the butter, it will sound scratchy at first and then smooth out.
Add the egg yolk and vanilla.
Finally mix the flour in and roll into a dough ball.
Dust with a little flour and roll out to approximately 1cm thick.
Cut the shortbread into circles and transfer onto a non stick baking tray.
Bake the biscuits in a preheated oven 170c for 10 minutes.
For the burgers, place 500g of beef into a mixing bowl with the chopped garlic, salt and pepper.
Using a zester for fine grater, grate the oxo cube into the bowl with the beef for an extra hit of beefy flavour.
Divide the burgers into four equal portions.
Cut the butter into 4 portions.
Wet your hands before shaping the burgers around each piece of butter and place on a plate ready for cooking.
Preheat a grill pan for a large non stick frying pan.
When the pan is hot cook the burgers on each side for 4-5 minutes.
Cut the bread buns and toast if preferred.
Melt the cheese on the burgers by placing a slice on top, add a splash of water to the grill and cover with a lid.
Serve with burgers with sliced red onion, tomato and the type of sauce you love.
I’m serving mine with a simple BBQ sauce, equal amounts of red and brown sauce with a splash of soy and vinegar for a tangy BBQ flavour.
