Heritage carrots have a delicious full flavour and their multi-hued colours make for a real show stopping dish. Maple syrup brings out their natural sweetness and will caramelize the carrots for a delicious sticky texture.
Serves 4-6.Ingredients:
1kg heritage carrots
50ml maple syrup
Bunch of lemon thyme
Method:
Parboil the carrots until they are just softening. Boil each colour separately so the colours don’t mix.
Add the carrots to a medium pre-heated frying pan and add the maple syrup.
Leave on a medium heat and stir occasionally until the carrots caramelise and start to become sticky.
Right at the end, add leaves of lemon thyme.
