Colourful and fresh, this salad tastes as good as it looks.

Ingredients:
3-4 courgettes
200g jersey royal potatoes
1 red onion
1 bunch of asparagus cooked in boiling water for 5 minutes
2 lemons
80g feta cheese
1 handful of parsley
1 handful of mint
1 bunch of chives
Method:
Cook the potatoes for 15-20 minutes in salted boiling water.
Slice the courgettes and red onions, drizzle with olive oil and season with salt and pepper.
Pre-heat a grill pan or BBQ and cook the courgettes and onions for 3-4 minutes on each side.
When the potatoes are cooked drain and cool under cold water.
Slice the potatoes and add to a bowl with the courgettes and red onion.
Drizzle a little olive oil over the salad along with the feta and herbs.
Mix the salad together and serve with wedges of lemon.
