Ingredients
5 lemons (unwaxed)
1 litre vodka
700g sugar
700ml water
Method
Zest the lemons and place in a large measuring jug with the vodka and cover with cling film for 2 days.
Gently heat the water and sugar together until dissolved.
Combine the sugar syrup and vodka together and decant into preserving bottles and leave for 4 weeks to mature and develop the flavour.
