Ingredients:
4x 170g portions (approx) Salmon, Hake or Cod
2 beaten eggs
3 tbsp Plain flour
150g Wholemeal breadcrumbs
3 large baking potatoes
100g frozen peas
1/2 lemon
2 tbsp olive oil
1/2 tsp honey
Salt and pepper
Method:
Cut the potatoes into 1cm slices and place on a plate with 20ml of water.
Turn a plate upside down and place on top of the potatoes.
Place the potatoes in the microwave for 5 minutes to part cook.
Preheat the oven to 180°c.
When the potatoes are part cooked remove from the microwave and leave to cool for 20 minutes, then cut them into thin chips approx 1.2cm thick.
Drizzle some olive oil over the potatoes and place on a non-stick baking tray.
Cook the chips in a preheated oven for 20 minutes until golden and crisp.
While the potatoes are cooking, let's turn our attention to the fish.
If you have not cut the fish, carefully cut into equal portions.
Crack your eggs into a bowl and whisk together, place your flour into another bowl along with the bread crumbs into another bowl.
Season your fish with a little salt and pepper before rolling in the flour.
Lift the fish out of the flour and place into the beaten egg, then roll in the bread crumbs making sure the fish is completely coated.
Preheat a non-stick frying pan with some olive oil.
Carefully place the fish into the pan laying it away from you to avoid splashing.
Cook the fish on medium heat until golden and crisp it should on take 4-5 minutes, then turn over and cook for a further 3-4 minutes.
While the fish is cooking on the second side, its time to cook the peas.
Place the peas into a small pan with honey, lemon and a splash of olive oil.
Warm the peas in the pan and if you want to mush them up use the back of a spoon and squash them or you can just warm them through.
When the chips and fish are cooked remove from the oven and serve with the peas.
