Ingredients
4 pork sausages
1 garlic clove
1/2 red chilli chopped or 1/2tsp dried chilli flakes
100ml White wine
400g tin of chopped tomatoes
360g Dried penne pasta
2 tbsp Mascarpone
1 handful parsley
Here’s how
Cut the sausages out of their skins and place in a large non stick frying pan with a drizzle of extra virgin olive oil.
Crush and chop the garlic before adding to the pan with the chilli.
Using the back of a spoon break the sausage meat up and stir together for 5 minutes until the sausage meat is cooked and the flavours marry together.
Add the white wine and reduce by half.
Cook the pasta in a large pan of salted boiling water for 9 minutes.
Meanwhile add the chopped tomatoes and stir together.
Simmer the sausage and tomato sauce before add the mascarpone
Add one ladle of pasta cooking water and stir together, then taste the sauce and season if needed.
Lift the pasta out of the cooking water and add to the pasta sauce
Finish with chopped fresh parsley and a drizzle of extra virgin olive oil
