Ingredients:
200g Flour
4 Eggs
600ml Milk
100g Chorizo
1 Red pepper
1 Medium red onion
1 handful Basil
1 Mozzarella ball
100g Smoked salmon.
2 Poached egg
2 slices Ham
50g Cheese
4 Spring onions
How to:
Scotch Pancakes
Place the flour into a mixing bowl and add the baking powder.
Make a well in the centre of the flour and mix in the eggs, followed by the milk.
Whisk together until smooth and leave to rest for 10 minutes before cooking.
Pre heat a non stick frying pan with a very little amount of oil.
Using a ladle pour the mixture into the pan, enough to make small fluffy pancakes.
Cook until bubbles start to appear, then flip over and cook for a further couple of minutes.
Repeat the process until you have cooked all the pancakes.
Serve with honey and lemon juice mixed together
Crepe style pancakes
Place the plain flour, cocoa powder, 2 large eggs, milk and vegetable oil and a pinch of salt into a bowl and whisk to a smooth batter.
Set aside for 30 mins to rest if you have time, or start cooking straight away.
Pre heat a medium saucepan and carefully wipe it with some oiled kitchen paper.
When the pan is hot, cook your pancakes for 1 min on each side until golden, keeping them warm in a low oven as you go until you have made enough pancakes.
Served with smoked salmon and a poached egg

Slice the red onion as thinly as possible and do the same with the red pepper.
Cut the mozzarella and pick the basil leaves.
When your pancakes are cooked take one at a time and place a cut from the centre of the pancake at 6 o'clock on the clock face.
Place the sliced red onion on the first quarter from 6 o’clock on a clock face to 9 o’clock, then place the sliced red pepper at 9 o'clock to 12 o'clock.
Place the mozzarella at 12 to 3 and the basil from 3 to 6 on the clock face.
You should now have some ingredients in four different sections.
Fold each quarter up from the red onion covering the next section until you have it folded up.
Place the fold pancake onto a non-stick baking tray, then repeat the process.
Cook the pancakes in the oven for 10-15 minutes and serve.
