A taste of summer in every bite. With sweet and smoky grilled peaches and tart red currants.

Ingredients:
2 peaches
2 nectarines
1 punnet of red currents
3 shallots
Handful of watercress or rocket
80g feta cheese
2tbsp red wine vinegar
2tbsp extra virgin olive oil
30g walnuts
10g sunflower seeds
Method:
Cut the peaches and nectarines in half and place on a non-stick heated grill for 5-6 minutes.
Place the grilled fruit into a mixing bowl.
Peel and slice the shallots and place in the mixing bowl with the vinegar and olive oil.
Add the red currents, salad leaves and feta cheese.
Place the nuts and seeds into a frying pan with a little olive oil and roast for 2-3 minutes until crunchy and golden , then add to the salad and mix together.
