Tart red currants are a delicious addition to gooey chocolate brownies.

Ingredients:
200g 70% dark chocolate
185g butter
1 tsp sea salt
3 large eggs
275g sugar
85g plain flour
Zest of 1 orange
100g fresh red currants
Method:
Pre-heat oven to 170°C.
Break the chocolate into small chunks, set aside a few chunks for later.
Place the chocolate, butter and salt in a mixing bowl over a pan of simmering water. Allow to melt.
In a separate bowl, whisk the sugar and eggs together until light and fluffy and at least twice the volume.
Add the egg mixture to the chocolate.
Sieve the flour into the mixture and fold in carefully.
Finally add the orange zest and red currants and give it a final stir.
Pour the mixture into a deep baking tray.
Sprinkle with the last few chunks of chocolate. Using your finger push the chunks of chocolate under the surface of the brownie mixture.
Bake for 18-20 minutes.
Leave too cool, then cut into squares and serve.
