Ingredients:
1 large pineapple
100g Soft brown sugar
1/2 tsp ground ginger
1 lemon
4 scoops of vanilla ice cream
How to:
Cut the top and bottom off the pineapple, then slice down the sides of the fruit to remove the skin.
You can also get a pineapple tool to remove the skin and core if you like.
Cut the pineapple into four equal portions and sprinkle with the brown sugar.
Place the fruit into a non stick frying pan with any of the remaining sugar as well as the ginger.
Cook the pineapple on both sides until golden, it’s not about cooking the pineapple all the way through it about caramelising it on the outside.
Cut the lemon in half and squeeze over the fruit.
Turn the heat up to melt the sugar and lemon juice together to create a syrup, the. Remove from the heat and serve with ice cream.
