Ingredients
250g Salted butter softened
100g Caster sugar
30g Soft brown sugar
1 Free range egg yolk only
1 tsp Vanilla extract
375g Plain flour
150g 70% Dark chocolate
30g Soft brown sugar
20g Malden sea salt
Here’s how
Cream together the butter and both sugars until light and fluffy.
Add the egg yolk, remember to keep the egg white for later and mix together.
Add the vanilla, flour and chocolate chunks.
Slowly mix together to form a soft dough, then roll into a long sausage shape.
Brush the dough in egg white and roll in the remaining soft brown sugar.
Chill the shortbread for 1-2 hours in the ridge before slicing into 2cm pieces.
Place on a non stick baking tray and sprinkle with sea salt.
Bake in a pre heated oven 160c for 12 minutes.
