A weeknight staple marinated and grilled. Top tips - resist the urge to turn the chicken while it cooks, it will cook more evenly this way. Use tongs to move the chicken, don’t pierce with a fork or juices will escape.
Serves 4.Ingredients:
4 chicken breasts
2 tbsp olive oil
1/2 tsp salt
1/2 tsp pepper
1 tsp chopped fresh thyme
10g dried wild mushrooms
Method:
Place the chicken breasts into a bowl.
Place the dried mushrooms, fresh thyme and oil into a food processor and blend into a dressing texture.
Pour the mixture over the chicken and mix together to make sure the chicken is fully coated.
Leave the chicken to marinate for 30 minutes in the fridge.
Season the chicken with the salt and pepper.
Pre-heat a grill pan for 3-4 minutes on a medium heat.
Place the chicken into the pan and leave to colour and cook for 7 minutes on each side and until fully cooked.
Serve with steamed vegetables or your choice of side dishes.
