Ingredients
For the buns:
500g Self-raising flour
400ml Milk
1 tsp Salt
2 tbsp Sesame seeds
For the beef filling:
250g Minced beef
1 tsp Salt
1/2 tsp Pepper
1/2 oxo cube
60g Mature cheddar cheese
For the veggie filling:
100g cooked and washed lentils
100g chickpeas, washed
1 sweet potato
1 tsp ground cumin
1 tsp black olive tapenade
2-3 tbsp plain flour
60g Feta cheese
3 tbsp Greek yoghurt
For the BBQ sauce:
3 tbsp Ketchup
3 Tbsp Brown sauce
2 tsp Dark soy sauce
Here’s how:
Pour the flour and salt into a mixing bowl.
Make a well in the middle and pour in the milk.
Mix the dough to form a soft ball of dough, then leave to rest for 10 minutes.
While the dough is resting place the beef into a mixing bowl and season with salt, pepper and a grated oxo cube.
Roll the beef into 15-20g balls and place on a tray.
Cut the cheese into 1/2cm slices and place on top of the beef meatballs
Divide the dough into portions of approximately a 5cm round ball and roll out to 1/2 cm thick.
Place the beef in the centre and wrap around the dough
Squeeze the excess dough from the bottom and pinch shut.
Place the burger bun onto a paper muffin case and then into a streamer.
When all the buns are complete steam for 10 minutes until light, fluffy and fully cooked.
For the veggie filling
Place the lentils and chickpeas into a mixing bowl with salt, pepper and cumin and squeeze together to make a pulp.
Add the sweet potato and tapenade and mash together.
Add a little flour and stir in, add more if it is not stiff enough to roll into balls.
Roll the mixture into 5cm balls and place on a tray to rest.
Cut the feta cheese into 1/2cm slices and place it on top of the balls.
Divide the dough into portions approximately a 5cm round and roll out to 1/2 cm thick.
Place the beef in the centre and wrap around the dough

To make the BBQ sauce simply mix the ketchup, brown sauce and soy for a sweet and tangy BBQ sauce.
