Take advantage of strawberry season and try baking these simple summery biscuits.

Ingredients:
200g self-rising flour
100g caster sugar
100g butter
1 egg
4-5tbsp strawberry jam
60g flaked almonds
1 egg, beaten
Method:
Pre-heat oven to 190°C.
In a bowl, rub together the flour, butter and sugar until the ingredients form a breadcrumb like texture.
Beat the egg and add to the bowl gradually. Mix until a dough forms. The dough should be quite stiff so you may need less egg than you have.
Flour your hands and take golf ball sized pieces of dough and place on a non- stick baking tray.
Slightly flatten each ball and make a deep well in the centre.
Fill the well with jam, a teaspoon in each biscuit.
Wash the dough with the beaten egg and sprinkle the flaked almonds on top.
Bake in the oven for 15 minutes until light golden brown.
