The flavours of clementines, lemons, bay leaves and herbs in this simple recipe give the meat a succulent and fragrant flavour. Dress the turkey with the roasted clementines and bay leaves for the ultimate centrepiece for your Christmas table.
Serves 4-6.
Ingredients:
3 large onions
6 clementines
4 garlic bulbs
1 bunch of rosemary
2 handfuls of bay leaves - one for the turkey and one for the roasting tray
2 lemons
4 tbsp olive oil
Salt & pepper for seasoning
Method:
Pre-heat oven to 200°C.
Roughly chop the onions and rosemary. Split the garlic bulbs and half the clementines. Place them all into a roasting pan along with one handful of bay leaves.
Place the turkey in the roasting tin.
Drizzle the oil over the turkey and rub into the skin along with plenty of salt and pepper.
Add 2 lemons and the remaining bay leaves into the cavity of the turkey.
Cook at 200°C for the first 40 minutes then cover in foil. Turn the heat down to 180°C and continue to cook until the turkey is fully cooked and golden brown.
