Ingredients
8 cumberland sausages
1 tbsp oil
2 apples
2-3 small red onions
1 tbsp fresh Rosemary
1 tbsp fresh thyme
2 tbsp olive oil
Salt and pepper
240ml milk
240ml eggs
240g self raising flour
Here’s how
Place the oil into a frying pan, then add the sausage and red onions cut into quarters.
Cook the sausages until there is some golden colour, then remove from the pan as they will cook again in the oven .
Peel and core the apples. Then cut into 8 pieces.
Place all the ingredients for the Yorkshire puddings into a bowl and whisk together.
Add the chopped thyme and remaining rosemary.
Place the sausages back onto the pan with the remaining oil.
When the pan is nice and hot pour the Yorkshire pudding batter into the pan.
Drop the apple pieces in with the sausages and place in a preheated oven 190c
Cook the toad in the hole for 30-40 minutes until golden brown.
Serve with fresh vegetables and lots of gravy.
