Ingredients
500g Plain flour (or bread bread flour)
1 tbsp Baking powder
1 tsp Salt
330ml Bottle of fizzy water
1 tbsp Olive oil
2 Tins Chopped tomatoes (400g tins)
2 Garlic cloves chopped
1 tbsp Mixed herbs
250g Grated mozzarella
1 Bunch Fresh basil
Toppings of your choice
Here’s how
Place the flour, baking powder and salt into a mixing bowl and blend together.
Pour in the water and olive oil and mix to a soft ball of dough, if you need a little more liquid just add a splash of water.
Knead the dough for a minute or two, then return to the mixing bowl to rest for 2 minutes.
To make the tomato sauce for the pizza, pour both cans of tomatoes into a sieve and sit over a mixing bowl to drain away the excess water.
Dispose of the tomato water and place the drained tomatoes into the mixing bowl with the chopped/grated garlic, mixed herbs and olive oil.
After the dough has rested, remove from the bowl and scoop out onto a clean lightly floured work surface.
Divide the dough into 6 portions, then roll out into pizza bases.
Preheat a non stick frying pan.
Fold your first pizza in half and then into quarters.
Lift the folded pizza and place into the non stick frying pan and unfold carefully.
Spread the pizza sauce over the base, then sprinkle with mozzarella and any toppings of your choice.
Either grill the top of the pizza in the pan for a few minutes or use a blow torch and cook the top of the pizza until the cheese is melted and the crust is golden.
