Burger ingredients:  

565g canned young jackfruit in brine or water

1tbsp olive oil

1 onion

4 cloves of garlic

Vegan BBQ sauce

 

No-Mayo Slaw ingredients:

½ white cabbage

½ red cabbage

4 large carrots

2 red onions

4tbsp lemon juice

2tsp Dijon mustard

1tsp salt

1tsp black pepper

8tbsp olive oil

Burgers method:

Drain the brined from the jackfruit and wash.

Heat a deep pan and add a splash of olive oil.

Add the onion, garlic and jackfruit to the pan. Cook for 10 minutes.

Stir in plenty of BBQ sauce, add water so jackfruit is covered completely.

Cover and simmer for 1 hour on a low heat.

When it is ready you will be able to pull the jackfruit apart with a fork, the texture should be similar to pulled pork.

 

No-Mayo Slaw method:

Finely chop the vegetables.

Place all other ingredients in a bowl and mix.

Pour the dressing over the vegetables and mix together.

 

Serve the jackfruit and slaw together in lightly toasted buns and enjoy!
