Fresh and tasty
Serves 2
Ingredients:
1 medium red onion
1 tbsp of olive oil
1 tsp of salt
1 cooked and peeled potato
4 free range eggs
1 handful of washed wild garlic
60g grated cheese (cheddar or Lancashire)
Method:
Pre heat a non-stick frying pan on a medium heat.
Finely chop the red onion, then add the oil and salt to the frying pan followed by the chopped onions.
Cook the onions for a few minutes until soft while you chop up the potato into pieces.
Push the onions to the edge of the frying pan and place the potatoes in to cook for a few minutes to turn golden and crisp.
Whisk the egg together and season a little, then pour into the pan with the onions and potato.
Chop the washed wild garlic and sprinkle over the frittata followed by the grated cheese.
Place the frittata into the oven 160c for 10 minutes to finish the cooking it through before serving.
